It was not Ferris Bueller (aka Abe Froman Sausage King of Chicago)'s Day off, it was Zeb Scherer's Day off. Today Zeb was the Sausage King... of Nome.
For Christmas I got Zeb a meat grinder, good deal at the local AC store during a 50% off sale. Zeb saved some deer meat from his Wisconsin Hunt to be later processed into burger or sausage. Today after the big Packer Win, was a great day to complete the processing task. Considering it was -30 with the wind.
We purchased some pork fat last time we were in Anchorage. No sausage would be complete without a bit of fat.
After you grind it through once with the fat, then add in the seasonings, ours came from The Sausage Maker.com.
After it is seasoned, grind a second time and put into freezer bags.

Ha. I do that every week, except with sheep meat and it is a hand meat grinder.
And it is not sausage, it is just because I want ground meat..:)
